Miyasaka Brewing Company has started to brew Sake since 1662.
They overcome several financial difficulties, and has kept to improve the quality of Sake.
In 1946, one yeast is isolated from Kura of Masumi, and named it No.7 yeast.
This yeast is widely used in Japan.They thought that their roots is this No. 7 yeast.
They decided to use only No. 7 yeast for their Sake brewing.
The brand name of Masumi is named from ”Masumi no Kagami (mirror)” of Suwa Taisha Shrine.
