Yamadanishiki, the king of rice for Sake brewing, and No. 7 yeast, famous for "Masumi yeast" which is picked from a tank in Miyasaka brewing company. No.7 yeast makes gentle flavour, comfortable acid and well balanced taste Sake. Allmost brewing company in Japan uses this No. 7 yeast now.
